- 250 grams fresh ginger root (9oz)
- 2 lemons
- 1 1/4 cups white sugar
- 5 cloves (whole)
- 2 ml cream of tartar
- 2 litres boiling water
- 3 1/2 teaspoons instant yeast

Instructions
- Peel and slice ginger.
- Grate lemon skins and extract juice.
- Add sugar and zest to ginger.
- Crush ginger into mixture.
- Add boiling water and stir until sugar melts.
- Add cream of tartar and cloves.
- Allow to cool.
- Sprinkle yeast on the top and stir in lemon juice.
- Cover with a cloth and leave until bubbles form on surface (overnight).
- Strain, bottle and refrigerate.
