  • 250 grams fresh ginger root (9oz)
  • 2 lemons
  • 1 1/4 cups white sugar
  • 5 cloves (whole)
  • 2 ml cream of tartar
  • 2 litres boiling water
  • 3 1/2 teaspoons instant yeast

Instructions
  1. Peel and slice ginger.
  2. Grate lemon skins and extract juice.
  3. Add sugar and zest to ginger.
  4. Crush ginger into mixture.
  5. Add boiling water and stir until sugar melts.
  6. Add cream of tartar and cloves.
  7. Allow to cool.
  8. Sprinkle yeast on the top and stir in lemon juice.
  9. Cover with a cloth and leave until bubbles form on surface (overnight).
  10. Strain, bottle and refrigerate.

Ingredients
  • 1 litre water
  • 60 ml ground ginger (4 tablespoons)
  • 3 cups sugar
  • 4 litres cold water
  • 1/2 cup raisins
  • 1 pineapple peeled and chopped
  • 3 ml cream of tartar
  • 5 ml tartaric acid
  • 15 ml instant dry yeast (optional)

  • 1 litre water
  • 60 ml ground ginger (4 tablespoons)
  • 3 cups sugar
  • 4 litres cold water
  • 1/2 cup raisins
  • 1 pineapple peeled and chopped
  • 3 ml cream of tartar
  • 5 ml tartaric acid
  • 15 ml instant dry yeast (optional)
Instructions
  1. Boil the 1 litre of water with the sugar and ginger for about 20 minutes.
  2. Transfer to a large pot or bucket and add the rest of the water.
  3. Add the raisins, pineapple, cream of tartar and tartaric acid.
  4. Dissolve the yeast in a bit of warm water and add to mixture.
  5. Cover and leave at room temperature until the raisins bob to the top.
  6. Decant into bottles with tight fitting lids (empty soda bottles work well) and refrigerate.

  • 1 clean cloth or coffee filter
  • 1 plastic sieve
  • 1 litre water bottled or filtered
  • 3 tablespoons sugar
  • half a lemon sliced
  • 2 dried figs
  • 3 tablespoons water kefir grains
  • Second Fermentation
  • selection of fruit or flavourings of choice eg: banana, peach, pineapple, lemon, ginger, carob, raisin, kiwi, etc

Instructions
First Fermentaion 24 hours
  1. Fill the glass jar with the water and sugar, stir to dissolve. Drop in the figs and lemon slices and then add the kefir grains. Be sure to use only plastic utensils - not metal.
  2. Cover the container with some cheesecloth or a coffee filter and secure with string or an elastic band.
  3. Leave to sit for 24 hours away from direct sunlight.
Second Fermentation 12 Hours
  1. Remove the figs and lemon slices and pour the liquid into a clean jug - catching the kefir grains with a plastic sieve.water kefir grains
  2. Pour kefir liquid into clean glass bottles and add fruit or flavourings of your choice. Leave a bit of space at the top of the bottle to avoid explosions.
  3. Set aside (out of direct sunlight) to ferment for another 12 hours.
  4. Place the bottles in the fridge and serve cold.bottles of kefir with fruit

  • purified water
  • 1 small piece fresh ginger root
  • ¼ teaspoon turmeric
  • 1 small pot
  • black pepper
  • honey to taste
  • 1 lemon juiced

Instructions
  1. Peel and slice the ginger root
  2. Put water, ginger and turmeric into the pot
  3. Bring to the boil and simmer for about 10 minutes or longer (the longer you simmer it, the stronger it gets)
  4. Add a crack or two of black pepper to help the absorption of the turmeric
  5. Stir and strain into a cup
  6. Add lemon juice and honey to taste
