Instructions
First Fermentaion 24 hours
Fill the glass jar with the water and sugar, stir to dissolve. Drop in the figs and lemon slices and then add the kefir grains. Be sure to use only plastic utensils – not metal.
Cover the container with some cheesecloth or a coffee filter and secure with string or an elastic band.
Leave to sit for 24 hours away from direct sunlight.
Second Fermentation 12 Hours
Remove the figs and lemon slices and pour the liquid into a clean jug – catching the kefir grains with a plastic sieve.
Pour kefir liquid into clean glass bottles and add fruit or flavourings of your choice.
Leave a bit of space at the top of the bottle to avoid explosions.
Set aside (out of direct sunlight) to ferment for another 12 hours.
