Olive Oil Granola with a Twist

Ingredients
  • 4cups rolled oats
  • 1 ½cups nuts(see recipe notes below)
  • 1cup seeds(see recipe notes)
  • ½ cup shredded coconutor coconut flakes
  • ½cup honey(or pure maple syrup, or half and half)
  • ½cup Extra Virgin Olive Oil
  • ¼cup apple or orange juice concentrate
  • ¼cup brown sugar
  • 1teaspoon Himalayan salt
  • 1teaspoon ground ginger
  • ½teaspoon cinnamon
  • ½teaspoon anise
  • ½teaspoon cardamom
  • A good few cracks black pepper
  • Apinch nutmegand cloves
  • 2teaspoons vanilla extract
  • 3/4cup dried fruitchopped (see recipe notes for suggestions)
Instructions
  1. Preheat your oven to about 150°C (300°F)
  2. Combine all the ingredients except for the dried fruit in a large bowl and mix well.
  3. Spread the mixture evenly on a large baking tray and bake for about 45 minutes until it looks golden brown. Give it a good stir every 10 minutes or so.
  4. Add the dried fruit
Recipe Notes

Pick and choose which nuts, seeds and spices to include but be adventurous.

Nut suggestions:  almonds, walnuts, pistachios, cashews, pecans, macadamia or a mixture

Seed suggestions: sesame, flax, pumpkin and sunflower seeds

Dried fruit suggestions: apricots, raisins (if you must) apple rings, cranberries, blueberries
