Homemade Ginger beer x2

homemade-ginger-beer

We covered Ginger Tea but if you like your ginger drink cold, you can make ginger beer. It’s really easy, tastes yummy and you know exactly what’s in it. There seems to be more ginger beer recipes than I’ve had hot breakfasts but here are two to try.

Pineapple Ginger Beer

What you need:

  • 1 liter of water
  • 60 ml ground ginger
  • 3 cups of sugar
  • 4 liters cold water
  • ½ cup raisins
  • 1 pineapple, peeled and chopped
  • 3 ml cream of tartar
  • 5 ml tartaric acid
  • 15 ml instant dry yeast (optional)

What you do:

  1. Boil the 1 liter of water with the sugar and ginger for about 20 minutes.
  2. Transfer to a large pot or bucket and add the rest of the water
  3. Add the raisins, pineapple, cream of tartar and tartaric acid
  4. Dissolve the yeast in a bit of warm water and add to mixture
  5. Cover and leave at room temperature until the raisins bob to the top
  6. Decant into bottles with tight fitting lids (empty soda bottles work well) and refrigerate

Ginger Beer with Fresh Ginger Root

What you need:

  • 250g (9oz) fresh ginger root
  • 2 lemons
  • 1 ¼ cups white sugar
  • 5 whole cloves
  • 2 ml Cream of Tartar
  • 2 liters boiling water
  • 3½ teaspoons instant yeast

What you do:

  1. Peel and slice ginger
  2. Grate lemon skins and extract juice
  3. Add sugar and zest to ginger
  4. Crush ginger into mixture
  5. Add boiling water and stir until sugar melts
  6. Add cream of tartar and cloves.
  7. Allow to cool
  8. Sprinkle yeast on the top and stir in lemon juice
  9. Cover with a cloth and leave until bubbles form on surface (overnight)
  10. Strain, bottle and refrigerate
