How to eat Coconut oil for Weight Loss

The coconut oil weight loss diet must be the easiest diet on the planet. All you have to do is cook with coconut oil and add it to smoothies, porridge, coffee and vegetables.

Coconut oil is unique because it is not metabolized in the same way as other fats. It goes straight to your liver where it is converted to energy. The medium-chain fatty acids in coconut oil are the perfect food for your mitochondria – the batteries that power your cells. Coconut Chicken Curry

  • I kg chicken fillets, chopped – steam until cooked and set aside
  • 3 tablespoons coconut oil
  • 2 cloves garlic, crushed
  • 1 small piece fresh ginger, chopped
  • 1 large chopped onion
  • Selection of chopped vegetables (butternut, broccoli, cauliflower, carrots, zucchini, green beans, celery, snap peas, red pepper etc.)

Stir fry everything in the coconut oil for a few minutes and then add:

  • 250 ml coconut milk
  • 250 ml chicken stock
  • 1 tablespoon curry powder
  • 1 teaspoon cumin

Lastly, add the chicken and reduce the heat to a simmer for about 10 minutes while the sauce thickens. Serve over rice.

Choconut Balls

  • 125g unsweetened desiccated coconut
  • 2/3 cup melted coconut oil
  • ½ cup almond butter
  • 1 teaspoon vanilla
  • 1 cup dark chocolate broken into pieces
  • 1 tablespoon coconut oil

Mix the first 4 ingredients together in a bowl. Form little golf ball sized balls with the mixture and leave on a tray in the freezer to get hard. Once they are completely hard, melt the chocolate in a double boiler with the tablespoon of coconut oil. Dip the balls one by one in the chocolate and then leave them in the fridge to cool.
